CREAMY TOMATO PASTA RECIPE I
boil rice pasta.
Saute veggies in a little water (I used broccoli, mushrooms, bell pepper and onion.)
Blend sauce: 1 large jar of strained tomatoes, 2 tbsp tomato paste, 1 handful raw cashews, small piece of onion, 1/2 a red bell pepper, a few tbsp of maple syrup, garlic powder, black pepper, Italian seasoning and a little chili flakes to taste, and fresh basil. Blend in a high speed blender until totally smooth! (the Vitamix is a great blender to use for this to get it smooth and creamy.) After blending the sauce, pour over sautéed veggies to warm up. the mix in the pasta on low heat for a few minutes. serve and enjoy!
